The miracle of shirataki noodles
Cbasty suggested shirataki noodles to me as a low carb alternative to the A
sian noodles (all types) that I love so much and can’t really eat too often anymore. Maybe she just wanted to quell my bitching – but I like to think she’s a little eating right google.
I found House Foods brand shirataki noodles at my local Asian market for about $1.59 a bag. Shirataki noodles are primarily made of yam, although the bag I bought was a tofu shirataki, made of yam and tofu.
The House Foods shirataki noodles come in an 8 oz. bag and are wet packed. You have to drain and rinse them before using – and like tofu they take on the flavor of whatever you cook them in quite well. This 8 oz. bag is two servings and each serving has only 20 calories and 3 grams of carb!!! Check out the nutrition info yourself. These noodles vegan, as well.
Although the liquid the noodles come packed in smells a little funny, once they are rinsed and dried they look like regular noodles. We used them instead of tofu cubes in some homemade miso soup tonight and the results were spectacular. So happy – I can eat noodles again! We’re having them again later this week and are already scheming other dishes to use them in. Score!
